Friday: Steak with Roasted Carrots and Onions

What you May Have
† lemon
† garlic, 2 cloves
† large egg,1
† penne, 1⁄2 pound (1⁄2 box)
† all-purpose flour, 1⁄4 cup
† Dijon mustard, 3 tablespoons
† mayonnaise, 2 tablespoons
† low-sodium chicken broth, 4 cups
† dry white wine, 1⁄2 cup
† white wine vinegar, 1 tablespoon
† canola oil, 2 tablespoons
† olive oil, 2⁄3 cup
† paprika, 1⁄2 teaspoon
† crushed red pepper, 1⁄4 teaspoon
† kosher salt and black pepper

what you may need
† ground dark meat turkey, 1 pound (93 percent lean or less)*
† Newport or sirloin steaks, 4 small (1 inch thick; about 11⁄2 pounds total)*
† pork cutlets, 4 thin (about 3⁄4 pound total)*
† skinless tilapia fillets, 4 6-ounce
† cherry tomatoes, 1⁄2 pound
† eggplant, 1 medium (about 11⁄4pounds)
† medium carrots, 13⁄4 pounds
† red jalapeño pepper, 1
† romaine lettuce, 2 leaves
† shiitake mushrooms, 1⁄2 pound
† scallions, 4
† fresh ginger, 1 11⁄2-inch piece
† fresh tarragon, 2 tablespoons chopped
† fresh thyme, 12 sprigs
† fresh mint, 1⁄4 cup torn leaves
† red onions, 2 small
† baby potatoes, 1 pound (about 12)
† fresh mozzarella, 1⁄2 pound
† soft rolls, 4
† pickles (optional)
† pitted kalamata olives, 1⁄2 cup
† udon noodles, 1⁄2 pound
† panko bread crumbs, 3⁄4 cup
† potato chips (optional)


Monday:

Serves 4 Hands-On Time: 10m Total Time: 40m

Directions

  1. Heat oven to 400° F.
  2. On a large rimmed baking sheet, toss the potatoes, lemon, thyme, 2 tablespoons oil, and ¼ teaspoon each salt and pepper. Arrange in a single layer.
  3. Roast, tossing once, until the potatoes begin to soften, about 20 minutes.
  4. Toss the olives with the potato mixture; nestle the fish in it. Drizzle the fish with the remaining oil and season with paprika and ¼ teaspoon each salt and pepper.
  5. Continue to roast until the potatoes are golden brown and crisp and the fish is opaque throughout, 12 to 15 minutes.
Tuesday:
Serves 4 Hands-On Time: 30m Total Time: 30m
Ingredients
1/2 pound penne (1⁄2 box)
1/4 cup olive oil
1 medium eggplant (about 1 1⁄4 pounds), cut into 1⁄2-inch pieces
1/2 pound cherry tomatoes, halved
2 cloves garlic, sliced
1/4 teaspoon crushed red pepper
kosher salt and black pepper
1/2 pound fresh mozzarella, cut into 1⁄2-inch pieces
1/4 cup torn fresh mint leaves
Directions
Cook the pasta according to the package directions. Reserve ¼ cup of the cooking water. Drain the pasta and return it to the pot.
Meanwhile, heat the oil in a large nonstick skillet over medium-high heat.
Add the eggplant. Cook, tossing occasionally, until golden brown and tender, 8 to 10 minutes.
Add the tomatoes, garlic, red pepper, ¾ teaspoon salt, and ¼ teaspoon black pepper. Cook, tossing, until the tomatoes soften, 2 to 3 minutes.
Add the tomato mixture to the pasta, along with the mozzarella and reserved cooking water. Toss to combine. Sprinkle with the mint. By Kate Merker and Sara Quessenberry, October 2010

Ingredients

Directions

  1. In a large pot, bring the chicken broth and ginger to a boil.
  2. Add the noodles and cook, stirring, until the broth is nearly absorbed and the noodles are al dente, 4 to 6 minutes.
  3. Add the mushrooms and jalapeño and simmer until the mushrooms are just tender, 1 to 2 minutes.
  4. Meanwhile, season the pork with ½ teaspoon salt and ¼ teaspoon pepper. Coat with the flour, then the egg, and finally the panko.
  5. Heat the oil in a large skillet over medium-high heat. Cook the pork until cooked through, 2 to 3 minutes per side.
  6. Slice the pork and serve over the noodles. Sprinkle with the scallions.

Social Skills (and ADD)

I read this and thought it sounded so much like Brooklyn! I will have to keep an eye on this, but she definetly meets the criteria below for ADD!
1) having trouble making and keeping friends. (not really, though we only have a few friends she sees often and only one her age so some are more forgiving)
2) interrupting others (all the time, though this could be my fault)
3) Talking too loud (seriously is she screaming?)
4.) Invading others personal space (she gets right in their face when she talks to them)

It says to teach them
1) listening skills (nodding your head, eye contact, ask questions)
2) Voice (tone and volume)
3) Personal Space
4)Body Talk
5) Starting Conversations
6) Staying on topic (including responding to others without changing the subject)
7) STopping and thinking before talking

Milestones

According to parents magazine, if you kid doesn't talk at one it's not much reason for concern, even if they mostly babble until 16 months! Just keep talking to them a lot and engaging them in conversation. You may be too good at reading their signals (this is true! And funny, Boo talked so early, but we never knew what she wanted!)

The Taste List

Parents magazine has an article suggesting that you should have your baby taste the following 21 plant groups even while you are breastfeeding / pregnant helps. I did eat very different things while pregnant with Brookie, and mostly chocolate and pb when pregnant w/ Johel so maybe it does have a correlation...
1. Mushrooms-Boo loves, JJ tried, but not sure
2. Bromeliads(pineapple) Boo loves. JJ loves the juice, liked the fruit
3. Woody Trees-(bananas) Both love!
4.Cruciferous-(broccoli,cauliflower) Brookie loves
5.Myrtles- guava, cloves, allspice
6.Umbrellifers- carrots, celery, cilantro,dill- Boo will eat all, JJ seems to like celery, carrots
7. Heath (blueberry, cranberry) both like both
8. Legumes- both like
9. Gourds- cucumber, pumpkin, watermelon, zucchini- Boo loves all, JJ loves watermelon
10. Composites-artichokes, lettuce, sunflower seeds- Boo loves lettuce
11. sesames-sesame seeds , both ate them in pretzels and loved
12. Lilies- asparagis,chives, garlic- Boo loves , JJ ate garlic in things and seemed to like
13. Rosyplants-apples, apricot, blackberries, peaches, strawberries, raspberries- Boo loves, JJ favorites!
14. Grapes- both love
15. Cirtus - Boo loves, JJ likes the juice but may be giving him diaper rash
16. Nighshades- eggplants, peppers, potatoe Boo loves! JJ tried potato
17. Laurels- cinnamon, avacado, bay -Boo loves, JJ like cinnamon but seemed to bother him
18. Amaranths-spinach, swiss, beet, quinoa- Boo likes some, hasn't tried all.
19. Loosestrifes=Pomegrante- both seem to like the flavor
20. True Grass- barely, oats, brown rice Boo likes the last two, JJ likes oatmeal tried brown rice
21. Bind weeds- Sweet Potota- both like

So my conclusion is that Boo likes everything, and JJ hasn't tried enough at all...Maybe he's not that picky, maybe I just don't give him enough!

Boys Vs. Girls

I read this in an article in parenting, and thought it was so interesting and true from what I've seen so far. I wanted to relate it back to my kids...
1. Baby boys are 8x more likely to be born with a hernia. Sure enough, JJ had one, Boo did not
2.Infant girls feel pain and are more likely to cry than boys. Boo definetly cried more, she had colic, and things bothered her much more than JJ
3.Boys don't hear as well, but can better tell the direction of the sound.
4.Girls produce more oxycotin, making them more cuddly and involved in more caring play. JJ seems to cuddle more than boo. He is always kisssing us!
5. Boys play different, there is more banging, hitting, and playing rough. This is so true. Boo would read stories, and watch tv, and do relaxing things. She would study everything. JJ never takes time tothink he is always moving, playing, racing around, and pushing things.
6.Girls reach 50% of their height at 20 months , boys at 24 months... JJ isn't 24 months yet, but Boo should be 5'6-5'8 (I don't have her measure at exactly 20 months)
7.Girls speak sooner. An 18 month girl speaks 90 words , a boy 40. Boo said20 words by age 1, JJ still hardly says anything.
8.Girls potty train average of 35 months , Boys 39 months...Boo was around 36 months, maybe a little more. She started around 18 months though~!
9. Women pregnant with a boy consume about 10% more calories than with a girl. Boys typically weigh more. though Boo weighed 2 lbs more, I only weighed 2 lbs less with JJ! I did eat a ton more w/ JJ!

Outsmart your cycle

According to parents magazine, you can take better care of your self depending which week of your cycle you are on:
Week 1 (period weeK)
Increase your Iron, take a nap, write down thing you need to remember
Week 2:
Your optimistic, happiest sharpest thinking week
Week 3:
Increase Calcium and Magnesium to ward off PMS, eat less junk (stores as fat)
Week 4:
Lay off salt, caffiene, relax, pay attention to your skin.
